Kubo was the writer of Bleach. He solved writer's blocks by making up new characters, which worked about as well as you'd expect.
The last arc on Bleach was particularly terrible, with a metric shitton of new broken characters being introduced, gloated and then killed, all of the interesting plot hooks aborted for no good reason and the big bad getting cheesed to death after gaining perfect precognition because fuck you.

It shouldn't be that hard. I mean they sorta made the effort in the show, but didn't follow through with it. They had him recognize there was a sniper in their fight against BRNZ and give out some commands in that fight, and that was good, but they also had everyone misunderstanding his orders and it just boiling down to "hit it harder" either with Nora against BRNZ or everyone against the elemental.

Instead, what they could have done is have him come up with better strategies like using the terrain for cover against May, or instead of saying "we hit it harder" and waiting for everybody to ask what he means, he just says what he means (go for the weak spot). And they do that because they want to do comedy relief, but that really doesn't fit with what else they're trying to do with the character.

I think they did a decent job of showing Jaune's tactical mind in the JNPR vs BRNZ fight:

-When May turns out to be a sniper, he has JNPR retreat to a bunch of rocks (cover) while he and Pyrrha cover Ren and Nora as the withdraw (since he and Pyrrha have shields)
-Then he orders his team to spread out to minimize the effect of May's sniping--May can only cover so much ground at once with a semi-auto sniper rifle, so spreading out will take advantage of that
-When he notices the thunderclouds above the big rock, he has Nora charge up so his team can exploit their unique advantage in their chosen terrain
-He has the fastest and most agile member of his team, Ren, try and distract the sniper, which ends up nullifying BRNZ's 4-3 numerical advantage (Ren occupies 2 people while Jaune and Pyrrha occupy the other two, leaving Nora free to climb the mountain)
-He keeps an eye out for Nora's vulnerability to May's sniping in case Ren can't keep her attention, so he does a combo maneuver to send Pyrrha up to help cover Nora

Like you said, the writers did end up undermining him for the sake of comedy in that fight when he tries to call out team attacks, but otherwise I think they did a decent job and portraying Jaune as having a good grasp of tactics.

There are degrees and extenuating circumstances to it. Aura justifies a lot. The baseline assumptions of "what if people had superpowers" or "what if the world was filled with monsters" are significantly easier to digest than "what if a nigh-impossible happenstance was shown as calculated." Yeah, that actually did happen huh? Though in terms of raw killing power it did end up getting the job done when Weiss was able to hit it in the belly.

I could chalk that part of the fight up to rapiers specifically being a bad matchup to boarbatusks, since few other weapons would end up getting stuck on the tusks if you thrust them at a boarbatusk's face (maybe Crocea Mors would get stuck too since they're sufficiently similar weapons). Again, in terms of doing damage Myrtenaster did fine once Weiss managed to hit the boarbatusk in the belly, so at least the "fucking toothpick" can still hurt things when it hits..

It's neither of those. It's not incredible, it's not inhuman, it's simply impossible. Not in the sense of "ackshully magic doesn't exist," but "that is not compatible with basic logic we have been shown."
Like I said, we have long since established the baseline that people are superhumans. That's the premise of the series, so building on that just makes sense. Everyone has accepted that people have superpowers because that's how the world works.

The key concept here is internal consistency. Aura exists, fine. Semblances exist, okay. Dust is used as a power source, makes sense. All mentions of the color blue are replaced by incoherent screeching. Wait.
The last one doesn't logically follow from anything we've seen before.
"But it's a fantasy world!" is the worst possible argument since it validates literally anything. When we consume any fictional media we accept that it doesn't obey the same laws our reality does, but that it obeys laws nonetheless. Existence of magic doesn't mean that Ruby running from Vale to Vacuo in two seconds would be acceptable, because that doesn't follow the show's internal logic.

That explanation, again, just isn't compatible with the any of the logic we've seen, it's not remotely reasonably conveyed by what happened, and just doesn't make sense. And, even if Ozpin did use his reality warping to miraculously make it so, May, a trained soldier, could have waited for half a second to render it entirety null. Or shoot sooner. Or again.

That could've been fixed by, say, giving May a raycast Semblance which requires buildup and telegraphs when and where she's shooting. Jaune eyeballing the exact moment correctly would still be realistically impossible, but it'd be well withing reason to not draw attention.

Absolute, real-life logic cannot be always applied, true. It should work on the very basic stuff like money=useful and how human interactions work, but since this is fiction the hard logic of reality often gives way to anime logic.
But anime logic is still logic. It says that Ruby can run fast. Okay, that makes sense since people have superpowers.
What if M&K made Ruby run back to Vale to fetch more ammunition on a crucial moment? How would you justify that? You wouldn't, because it breaks everything we know of her and how the world works.
We know that people act and react mostly like humans. There are some exceptions, but they tend to be small (anyone doing an extra twirl mid-combat) or irrelevant (Ruby turning into a chibi) so they are ignored.
