Because they still live in a dangerous world. The nations may be at peace but that doesn't mean there aren't extremists, and political deviants. Plus Zuko would be unlikely to really trust his honor guard after all the betrayal in the fire nation and isn't the type to let people fight his battles for him either. Sokka is a warrior by nature and likely went out and had dangerous adventures, also as Sokka points out during Yakone's trail they've entered a lot of unique and dangerous people
