The problem with Mai as a wife for Zuko the Fire Lord is that she has shown him exactly zero trust through the whole series and the EU.

I don't really see it that way. The only ship from ATLA we know for a fact was canon was Aang and Katara. Everything else was left open. We don't know for sure if Zuko stayed with Mai even though he has descendants with a resemblance. We don't know if Sokka stayed with Suki and we don't know whether he even had any children. We don't know who Toph hooked up with beyond a name, and we don't know if she had a fling with Sokka even though some think Suyin resembles him.

It just seems like beyond Aang and Katara (the main ship) they had no interest in following up on other ships and what became of them.
