Just take a normal adult story and have it animated. Unless it's a comedy then people would call it a kids show if I left off the occasional shock and swear.

Look at Steven Universe, the episode where Greg was just trying to clean out his storage unit, it's pretty obvious Amethyst took advantage of him sexually in the past with her shape shifting, never mind his son almost died to shape shifting recently. Amethyst sends him into shell shock again with her shape shifting. This is all kinds of fucked up to an adult with more than two brain cells. But it had no swearing and it kept the horrible part of it subtle and implied, so this horrific form of psychological and sexual abuse against a grown man was considered child friendly.

...so what's the issue here...

Also allow death to be shown if it does occur, thought not in an over the top shock value sort of way. Just accept the big bad actually killed the person and not leave it ambiguous and up for debate

I hate this. It's true that live action is cheaper but the fact that animation is regulated to kids media is annoying. I don't mind kids cartoons but I wish cartoons targeted all demographics and genres like live action, literature, and music does. There's literally no reason animation should be only for kids. There's nothing inherently kiddie about it, it's a socially engrained idea.

Most anime are actually not aimed at adults. Even in Japan liking anime as an adult is weird. Naruto, Bleach, DBZ, and basically everything on Adult Swim is aimed at the 8-17 year old crowd. Genuinely adult anime - seinen and josei - are comparatively rare.

A simple story that I'd do:

A kid's perspective on his dad. His dad is one dimensional and makes silly dad jokes that make his son cringe. He works all the time and doesn't get out much. The son grows up and applies to go to college but learns that something isn't quite right with his paperwork. He finds out that his dad doesn't have legal paperwork. They resolve the paperwork and now the family decides to visit the dad's country since he can travel.

The son learns that his happy cheerful dad was a person who suffered a lot, and to mask his pain he acts in plain stupid ways to forget the pain.

Adapt a historical setting to the fucking letter. Make it feel adventurous, epic and exciting but also dont shy away from showing vruesome and horrific elements. None of the pop culture shit, make it as close as possible and contextualize everything throught storytelling. Don't take sides.

You don't try to make a "kid's show" or try to make an "adult show". You just try to make a show that doesn't treat its audience like they're either
a) Mentally retarded hyperactive six year olds who can't go five seconds without fart jokes or strobe effects or
b) Mentally retarded edgy teenagers who can't go five seconds without tits or gore on screen

Kids can handle big stories, big ideas, drama.
Adults can enjoy simple stories, casual narratives, comedy.

You don't have to go all the way to one extreme or another for a show to work. That's why all the best animated shows are the ones that find a happy middle ground

Teddy Ruxbin was my first memory of a cartoon that gave a flying fuck about continuety. I loved that show, i never had the toy, wasn't interested in a teddy bear with mechanical parts because not as huggable but I'm glad we had that on our four and a half Farmervision channels.
