It's not superhero movies, it's lazy shorthand for all big budget special effects spectacles
It invokes the primal awe primitive man had when he saw lightning. By having it go from the earth to the sky it suggests that the villain is like a god, wielding celestial power

It's a generic CGI effect that's easy to shoehorn into the finale, and shows the audience that 'something probably bad is happening'.
Also the Avengers did it and earned a cool billion. That means that if we do it in our shitty film we'll make a billion too, r-right?
