There's no discernible difference in quality as far as I can see. The overall tone shifted from a realistic interpretation to a more earnestly comic-book inspired style post-Avengers. That's the only real difference.

So this is what it's like to be in a drone's head

They're basically independent but with access to the Disney marketing machine.

I can't tell if it affected the quality of the movies one way or another.

Iron Man was the only great film from phase one. Since then we've had Winter Soldier, GOTG, Ant-Man and Civil War.
