Say they get the singer to agree to certain rights and royalties of "stronger than you" song as long as SU is aired on CN? Let's say it goes off the air and CN decided later to make a DVD release of the episode, well new rights have to be agreed upon and signed, but let's say the singer is missing or pulls an Alan Moore and just tells you to fuck off. Well now you are screwed because your options are now to either edit out the song, get a new song for it or risk a cover/airing it anyways and hope to god the singer doesn't have the time and money to sue you when/if they find out.
They don't have this stress with most VA work in general because they agree to a set price and/or royalty deals for their performance and then it's over. Music doesn't work like that so it can make things more of a chore if the singer is well known.

As someone who was really, really suspicious about it when it was recommended to me? There's not much to worry about.

It might be a touch SJW-y at times but there's one very, very important difference that makes it good rather than terrible, preachy bollocks.
It isn't mean about it, Steven Universe is basically at heart a nice show about nice (If troubled) people, it doesn't tell you that you're terrible for being a Cis-white-male or anything like that, it just shows other people not being hetro dudes.

Its progressive, rather than assholeish and the story is pretty damn good.

Free Will was considered a bad thing in the eyes of the Old Testament God. Eating the apple gave Adam and Eve free will, and they got kicked out of Eden. Basically, after that, God didn't micromanage too much, just looked after the Jews sometimes and killed anyone who went against him significantly (Tower of Babel, Sodom/Gomorrah, Entire world pre-Noah).
