It would have been a great way for her to go from being a "crush" to fleshed out mentor to Dipper, helping him grow while at the same time reminding him not to rush things.

That's pure bovine excrement. True, they've had more screen time together, but none of it was substantial. They spent all their time with their petty rivalry, and even after that was resolved she never thought much of her. The reason why Dipcifica shippers came in droves after NMM was because that was the only time Pacifica actually opened herself to someone. She's shown more genuine care and concern for Dipper than she ever did Mabel.
