Probably has something to do with how Garnet has future vision, namely that things keep going until something horrible happens. Garnet has probably experienced seeing so many friends die, only for that future to not play out, and they are alive again, until the future plays out where they actually do finally die. However long the war lasted, it probably went 10 times as long from Garnet's perspective and she would have seen shit like Rose Quarts getting her gem crushed before the rest of the army fell apart and things like that before future visions kicked in and she knew they should try something else.

Pearl got the benefit of spending half of it poofed and the other half running around as the hand maiden of the general and the sacrificial distraction. She may have even been the wolverine of the group, the one who fought some enemy first so they could assess how much of a threat they were or get a handle on their powers. That of course assumes Rose didn't have a bunch of Pearls and the current one got the benefit of being the Alpha Pearl by process of elimination.

You can sympathize with Amethyst though. She was raised by the remaining cult of gem perverts who are really slow explaining the details of why the war happened and what gem life is like. They simultaneously reflect on gem civilization while not really explaining it. That's why Amethyst wishes she saw the war. She knows nothing about her people's history, and her entire life she's been a hedonistic layabout because that's basically what Pearl, Garnet and Rose were reduced to. They don't build anything, they don't have a greater goal they can work towards, they just kind of exist. It's also why Peridot can upset Amethyst so easily. She talks about gem culture from an entirely different perspective than she is used to. Pointing out that Amethyst is the only one who isn't a Gem pervert while also being fundamentally flawed are both things that Amethyst never considered about herself
