I found a recipe for cardamom buns online, and it calls for wheat sourdough in the ingredients. I don't think I have time to spend a week or so feeding and growing a sourdough starter, so I want to work around that. If I combined unpasteurized ale with flour and let that sit for a day would that work?

I think the flavor in sourdough is produced by lactic acid so maybe find a way to incorporate some type of yogurt or whey.
