It's a digestive tract. It mostly just affects texture. It's a little gritty if you cook shrimp with it in. It's not the worst thing ever if you leave it in.

When I'm eating out I expect it to be removed.otherwise it probably means the prawns were frozen

I happen to be a line cook at a seafood place that specialises in local caught seafood. Everyone BOH from the owners and the Chef to dishwashers are pressed into shrimp peeling mulitiple 50lbs boxes a day. We use shrimp devainers (pictured). We have used very expensive machine to peel and devain shrimp, but nothing works las well as a $5 shrimp devainer.

If you're using shrimp, just buy it frozen or from the seafood counter where it's already been processed.

For prawns and larger shrimp, it's really not that hard and cooking it with the vein in will absolutely ruin the flavor and texture.

Unless you're buying it right at a dock, it was definitely frozen. Even in towns with big shrimping industries, they'll commonly catch the shrimp, freeze it, send it somewhere else to be processed, freeze it again, ship it back, and market it as "local."

I just eat it as it is, a lot of elders eat shrimps with tail legs and shell here
