In the UK at least there are independents who specialise and outperform any kind of chain. And that would be because it wouldn't be economically or logistically viable. We have the most amazing tea room where I am and nothing compares in the quality and service. Things are more expensive too, but it makes up for it in the quality.

I work at subway. Our district manager sent us a text one day of a picture of spinach with stink bug eggs on it. One of our sister stores found it in their spinach bags from our providers. Ew. That's not how it works. Often independent restaurants become chains then the quality suffers.

You are half right, no sandwich shop can compete with Subway in speed or price, but that shit comes at the cost of quality. All the independent shops around here make better subs, some of them WAY better. Subway is not really worth it's price when the quality suffers so very much so they can keep prices low and speed high. Independent restaurants can't take advantage of economies of scale so the price will always be higher, but if you care about quality at all it's worth the price.

The same goes for literally any fast food or even sit down restaurants, but the problem now is that it's a lot harder to become a chain now that there are so many chains. But I can go any non-chain and get better food than any chain for slightly more.

They both may be local community members but they're not the same. I'm not saying chains are all bad or all local restaurants are all good but chains thrive on brand recognition which relies on a consistency that comes at the price of quality potential.
