Yeah it is. I grow thousands of peppers at home and if I don't get creative they go to waste. This "relish" is great in a pan with some chicken.

If you use brine instead of oil you can keep them for a very long time instead of oil where they dont last long. looks good, but i would probably have a hard time using that much

Peppers are also great lacto-fermented.

I'd also recommend preserving them in honey, or even making a jam out of them.
you can slather it on a pork roast, and it will be shelf stable for decades.
