I'll start
Its easy as fuck.
Broccoli
Cauliflower
Potatoes
Bacon ~ 50-100g?
Mushrooms
Brussel sprouts
Garlic(very coarsely chopped)
quartered onion
Cut up Cauli and Potatoes put em on a roasting tray with some oil, salt and pepper.
Put Oven on 170°C - 350°F
Wait 20 minutes
Cut up the rest (excluding bacon & garlic) & throw em on the tray too.
Cut up the bacon and garlic into small squares and place it on the partially cooked and flipped Potatoes and Cauli.
Put it the tray back in for another 15-30 mins or till it starts to brown nicely.
Throw a hand full of sliced spring onions on there and a little salad dressing and you've got an easy, relatively cheap and HEALTHY meal.

Here's another.
Curried lentil & spinach bake:
1 chopped brown onion
2 cloves of garlic
2 teaspoons of curry powder
3 table spoons of olive oil
1 cup of rice
1 & 1/2 teaspoons of salt
pepper to taste
2 packs of frozen spinach
1 can of cooked lentils
2 cans of coconut milk
Preheat oven to 350 degrees F. Cook onion and garlic clove in olive oil in a large heatproof skillet over medium-low heat until translucent. Stir in rice, curry powder, salt, and pepper; cook 2 more minutes. Add spinach, lentils, and coconut milk. Cover and bake, 30 to 40 minutes.
Kale CHips
Kale-destemmed
Drizzle some olive oil, or grape seed oil
mix them up so they are covered
overn 250 degrees
30 minutes
toss some salt on em.
