I'd like to further my knowledge on food, flavors spices, and cooking. What're some good books and youtube channels or teach myself this stuff. Also how do I know what essential ingredients I should keep in my kitchen? I can't take classes atm.

That ought to be obvious based on what foods you cook frequently. You probably have an idea what ingredients you use often. Those are the ones you keep in your kitchen. The exact list is going to vary a lot depending on what kind of food you cook. If you're cooking a lot of Asian food that's going to have a very different list of ingredients than cooking French, for example.

Just look up a bunch of stuff about the spice trade. Follow the routes from East to West, then look at the various cuisines along the way. Then to the best of your ability go out and sample those cuisines. You can probably reverse engineer the rest on your own.
