I start making stews, chicken and dumpling and meat loaf are usually my go to for when the weather is getting chillier, dunno how much that is really an autumn recipe though.

Stews for sure. Long-cooking-time soups like proper tonkotsu ramen, bun bo hue, etc. This one cooks fast, but I also like butternut squash soup.

Shit, I make that year-round. None of the ingredients are seasonal and it doesn't take a super long time to cook.
Usually soups or smoked meats that are sweat. I used to go to my cousin's apple orchard before it was sold from under them. They took honeycrisp apples and pickle it in brown sugar and honey.
butternut squash and sweet potato soup is divine.
