If you want to make easy bread in a dutch oven, just go with a basic "no knead" bread. these two are good options for a beginner!

just knead flour water salt and a little oil together in a bowl...

then in the dutch oven, brush oil in there, then cover with cornmeal. then put the dough in there, let it rise for 1-2 hours, then bake it in there for a while like 1 hour at 350.. the bread won't taste like much, but you can put stuff on it, like beans, and eat it.
