If it wasn't tied up in holiday traditions, would anyone actually bother with turkey at all? It kind of tastes like shit tbqh. My family has switched to roasting chicken on Thanksgiving, and we're all much happier for it.

It of course involves more work than chicken due to being overall blander and more unwieldy due to size. But with a brine, stuffing it with herbs and spices, and carefully watching the temperature, I think it does justify the work.
