Chili powder.
So how do I do it? I have chillis, I have a dehydrator and every time I try to make powder it ends up more like a flake. Should I dehydrate, grind and then put the flake into the oven for a bit and grind it up again after that?
In short, how do I get dried peppers into a finer material. Im trying for a bhut jolokia/Habanero mix, should be a good mix of taste and heat.

Use coffee grinder.
Run the grounds through a mesh strainer.
Re-grind.
Rinse / repeat until you have as much as you want.

I have been doing this too, but it's just occurred to me the mesh is what is giving me the problem, I am an idiot. The mesh is obviously too wide.

Try either cheesecloth or pantyhose. Drape them tightly over a plastic box and secure them with tape / rubber band, add the ground pepper to the top and shake it until you get the amount of powder you want.

put the peppers(preferably cut in halves, seeds and membrane is optional) on a tinfoil lined baking sheet in the oven at 175°F for 6-8 hours until dried. Then blend the dried peppers and sift the powder through a wire mesh(wear a ventilation mask for this or just tough it out, it WILL burn your throat and nose) into a container. You can use the stuff in the strainer as a topping like pepper flakes and the stuff in the container like you would use chili powder. Hope this helps
