Is it acceptable as a last resort to use the bathtub for a huge batch of soup? My family got chosen to serve some homeless people along with a few other families (my wife works and her company selected her). We got the soup detail by drawing the number. It needs to be 40 gallons they said. SO.... what if I simply clean out the tub very well. Scrub it, sanitize it, wash it with lots of clean water... Then just make the soup.

Honestly how is that any "nastier" than restaurants that use the same old silverware day in day out? I feel like if anything feet are less contagious than mouths. Is this unethical?

40 gallons of soup is something you'd expect a fully kitted out field kitchen in the army with a squad of soldiers and access to commercial grade equipment to cook, not some unlucky employee.

I'd buy 40gallons worth of the most cheapest tinned soup you can find OR buy one large pot then prep ingredients for constant soup cooking so you can produce and serve 40 gallons in a certain timeframe on demand but not at once.

Load up your concentrated soup with bouillon cubes and a shitload of herbs. Maybe 2 gallons of it.

Cook a ton of noodles on the side to add some consistency to it all. Maybe some cut up carrots and potatoes as well as it 's easy to cook in large amounts, while giving it some weight.

Load with pepper and salt at the end to give it flavor.

I am a former restaurant manager. Your bathtub is not foodsafe. The material is not sterilizable, and it's not possible to adequately clean it regardless of the material due to the drains. That is a horrific idea, absolutely unacceptable and unethical. You don't have an adequate facility to make 40 gallons of soup. You'd need to cool it, and unless you have literally ten refrigerators, your fridge isn't going to be able to do that. So what happens when your soup is trying to cool off, is that the fridge will take about 12 hours to do it, by which point you'll have nasty dangerous bacteria growing, and will make people very fucking sick. From coming off the stove to being 40 degrees, you have less than two hours to get it cool (technically four by law), and that simply cannot be done with household refrigeration.

You clearly know nothing about food safety and the fact that they would allow random people to prepare food for the homeless is unethical and dangerous. You need to either buy 40 gallons worth of tinned soup or pass the project on to someone who has the facilities to do this.

I'd just cook a shit-ton of chicken noodle, the ingredients are cheap and easy to make. Try to find a local kitchen to partner with, I went to this church when I was a kid that had a full-service industrial kitchen in its recreational facility for some reason. Maybe if you partnered with a local culinary school it would work, are there any tech schools or jobcorps in your area?
Anyways, just get a shit-ton of chicken breasts on sale, look for discounts and call around a few grocery stores, offer to put their name on it if necessary. Get a shit-ton of egg noodles, they're pretty cheap, cheaper than the chicken. Get 40 cubes of bullion and a jar of salt.
Set the culinary kids to baking and cutting chicken breasts into cubes, making the stock and prepping the noodles. A good culinary kitchen will have enough refrigeration storage and sinks to safely get the temperatures down to a reasonable level.
Get some rubbermaid tubs, see if someone will sponsor it.
I'd honestly be shocked if you had to foot the bill yourself, I'd make sure the company will compensate all the receipts. If they don't, fuck 'em and don't do it and when they get on your ass tell them you don't make enough to make them look good, then smash a computer and quit.
When you hit the soup line, make sure to tell everyone how you became homeless trying to help the homeless but corporate greed attempted to bankrupt you to make themselves look good.

and it's very demoralizing.
