You can freeze the Guacanole and itll keep for about 3 months before it starts to go weird.

Use plenty of acidic additions and make sure there is no air in the bag.

Alternatively, you can make a few Mexican dishes for the week and use avocado every chance you get. Avocado tacos, seafood salad, tostadas, burritos...
