I used to make an awesome rice pudding with rose water, coconut milk, bay leaf and saffron. Sprinkle some chopped pistachios on there and you're a winner

Pretty well all herb blossoms are edible and tasty. Basil, mint, thyme, sage, chives etc etc
Bachelor button/cornflower- kind of a clove like flavor
Daylilies. Kind of taste like melon but not sweet.
Nasturtium. Spicy, peppery flavor. Also the seed pods are edible and tasty.
Borage. Flavor is honey like.
Some veg flowers, like squash/peas/bean flowers
Many fruit flowers (orange blossom, cherry/plum blossom etc)
Pansies/johnny-jump-ups
Some types of marigolds

Saffron, and the cheaper safflower.
But really, any edible flower can work and have a unique taste. Consider her favorite herbs, fennel pollen is all the rage for bullshit fancy stuff.
Borage tastes like cucumbers.
