Who else likes these old-school Tex-Mex enchiladas?
>half an inch of oil in a small, cast iron skillet
>flip each corn tortilla in the oil to get it greased and warm it through a bit
>brown ground beef and season with salt, pepper, and onion powder, drain fat
>spray an aluminum baking pan with baking spray
>add a spoonful of enchilada sauce to the bottom and rotate the pan around to spread it evenly
>roll Monterrey jack cheese into half of the tortillas, and beef into the other half
>fit uniformly into pan
>cover with enchilada sauce
>add cheddar cheese on top
>wrap in aluminum foil
>bake in oven at 350 until cheese is melted and enchiladas are heated through
>make two, bake one, freeze the other

Not usually. Two cans will do three 9x13 aluminum disposable trays. Los Palmas is a good brand. They've also got a good chili starter. Add beef and onions and you're good to go.

My mom makes something like this, she rolls shredded chicken into the tortillas and covers them in cheese, and then covers them in green salsa and serves on top of refried pinto beans and rice
