I was at a michelin-star restaurant the other day and with one of the courses came a cherry tomato. I believe it was roasted in the oven, but I don't know. It tasted amazing, like bolognese sauce, and I don't even like tomatoes. How do I make this at home?

You can't make this at home simply because you won't be able to find the top quality tomatoes the chef started with. Not even Gordon Ramsey could make something good using the crappy tasteless sugar water balls that are sold as cherry tomatoes everywhere.
