Any Saturday bakers here? I've got a potluck tonight and am bringing two loaves of bread. The dough is almost done with the bulk fermentation stage -- gonna shape it and proof it in about 30 minutes.

Here are my proofing loaves. I've only got one brotform, so I lined a fine mesh sieve with its linen liner for the second loaf.
If anyone has tips on shaping high hydration doughs, I'd appreciate it. Mine always end up a kind of floppy ball, and I have difficulty getting good surface tension.
I typically only cook during a full moon during the summer solstice, or a blue moon.

First loaf out of the oven. The second loaf stuck to the proofing basket and deflated when I pried it free. It's in the oven now, hopefully it'll turn out okay.
