Pig ears are fairly good, never tried snout or the rest but giving it a sous vide seems kinda dumb. Roast that shit like a real man.
anyone feel like all the stuff you sous vide has no soul? i did 36 hours short ribs and they were extremely tender and sound amazing on paper but they didn't impress me much. Maybe because the texture is too uniform?
I still like steaks sous vide, probably because I sear them after which gives them some character.

seems pointless. just braise or boil it. it's a fatty and strong tasting cut and the bones have a lot of flavor (boneless is an abomination), so sous vide just seems like a waste. I know it's popular but everything is with sous vide. I really can't think of any particular reason to sous vide short ribs when traditional methods already produce good results. Even he said it wasn't impressive

many traditional methods of cooking anything already produce good results in comparison to sous vide. end result was different, someone may prefer it over braised. you never try a different method for anything at least once?
