Hey I saw a youtube that said coconut milk could be used instead of milk for an interesting flavor change.
My question, does the ratio stay the same? i.e. a cup of milk = a cup of coconut milk

Do you mean in baking? Coconut milk is closer to heavy cream as far as fat content, so whatever you make will end up denser and richer if you substitute.

You're talking about a plant based milk. It's low in sugars and fat and is more comparable to skim milk. In my experience the ratio (have made pancakes and cake) is exactly the same.
