Anybody ever made gazpacho? I'm planning on making some for a potluck cookout this weekend. I made it a couple of months ago and it turned out good, but I'm looking for some ideas for ways I can tweak it, like maybe adding some different spices or another kind of veggie to it.
Ad ground beef/pork, and ground up dried chilli and pablano peppers, also pinto or kidney beans, then serve with cheese on top and saltines on the side
Works good for leftovers too, especially on all pork hotdogs

I would, but the whole reason I'm doing it is to have something that's just veggies. We have this cookout every year, and everyone always brings ridiculous, meat-based meme dishes.

Make a watermelon gazpacho. Hit it with some spices but not too much. This is a recipe I like.

I've made it before and quite frankly it just seemed like I was eating salsa as a soup. To be sure it had some cucumber, but it was still just fucking homemade taco sauce slurped with a spoon.
