I've never been able to taste bitterness, coo/ck/s. This only came to light when I shared food with others later in life, which lead to this whole discussion about why raw vegetables aren't supposed to taste like sugar and chlorophyll.
What am I missing out on? Describe your favorite dishes that need bitterness as a balancing component.
some coffee, some deserts, usually citrus based foods

Bitter is usually a "bad" taste, being the bodies mechanism for detecting poison or other bad things to eat. However, it does highlight and improve a number of other flavors.

I think you are partly confusing bitterness with sourness which is a different flavor receptor. Citrus is sour. Broccoli is bitter.
