I only eat leftovers 2 days. Freeze anything you don't intend to eat within 2 days, anon.
I like to do the sunday "roast" beef, roast turkey breast, roast pork loin, whatever. Morph it into a couple dishes, or work lunches.

I routinely make family sized portions and eat off of it for 2 weeks so I only have to buy and prepare 1 meal per paycheck (not counting breakfasts).

Any kind of soup. You make one big batch, eat for a day or two, and freeze the rest for later meals.
