Because they are too bureaucratic. Like how a larger ship takes more time to turn around than a smaller one. Smaller companies are much quicker to reply to market conditions than larger ones. This is one of the reasons natural monopolies are very unlikely in a free market. What's a fast way to get cooking oil off my hands?

Usually I use soap, water, and a rag, but the rag quickly becomes filthy.
