I'd slice it in medallions, dredge in seasoned flour, saute both sides in a little butter and oil, deglze, and then I'd make a luscious pan gravy, and simmer them a minute. Anything from steak diane to swiss steak. This is the tender steak so you don't need to braise or pound into submission.
