Got this book "off a truck" before I went to baking school a couple years ago. So helpful, and still is helpful to this day. Anytime you forget hydration percentages for breads and shit, it's all right there.

But it's really only needed for home baking, because any bakery you step into, you'll be in a whole other world but at least you still have an understanding on what is generally going on.
