/ck/s thoughts on pickled eggs? Any good recipes or suggestions on making pickled eggs. My dad makes some to sell at our gas station and they are good. Not too hot but just enough.
I want share so it isn't much of a shill post.
Hard boil eggs
Use 1part pickle juice 1 part pickled jalapeño pepper juice
Then add the eggs and the pickled peppers together and let it sit in the fridge.

Had a guy tell me that he uses fresh jalapeños and some cyan pepper to make his.
One thing we tried was fresh Serrano peppers. It was a bit warm for our liking but it was good with beer.

My asian wife makes them with vinegar, soy sauce, korean hot peppers and garlic. Flavor is very good, but the texture always seems rubbery to me which is true of american style too. Your dad's recipe sounds good too, but I'm just not wild about the texture after sitting in vinegar for awhile.
