Been doing a ton today.. chorizo, italian with herbs from my garden, maple breakfast, and two smoked kinds: black pepper juniper and garlic cheese

I haven't made real sausage since my roommate threw out my casings when cleaning out the fridge. I made a few free-form ones, but it's really not the same.

Bruh, I live in sol nowhere central illinois and I can go into the city and get chorizo. Its usually in the deli area or in the pre sliced cheese and pre packaged meat area. Its right next to the mortadella for me.
