How do you eat your blood sausage? And what is a good side dish?
I usually warm it up a little in the microwave and eat it with mustard.
Alternatively, you could fry it up with onions and potatoes and season it with caraway or horseradish. You'll want a relatively sour side dish like a salad or Sauerkraut though.

Interesting, because I usually put sugar or syrup on my blood sausage. I guess that could balance the sweetness some.

Blood sausage by itself is relatively greasy, and it gets even more greasy if you fry it. So when you take a big bite, the fat just seems to coat out all the taste-buds, and they have to be "reset" with something sour. At least that's my stance on it.
Making blood sausage sweeter might just work, the sausage usually harmonizes pretty well with sweet mustard, so you might be onto something here.

Trust me, it's tradition to eat it with sugar or some kind of syrup in my neck of the woods.
However, I've never been fully satisfied with fried taters as a side.
