>I'm back on the line and don't have the time or energy to make an at-home entry these days, but when servers fuck up an order and we have extra food I often wrap it up, stash it in the lowboy, and eat it cold for dinner when I get home, after a few drinks - 5-6 nights a week. My philosophy is that if a server fucks up an order and I have to make it twice, that first fuck-up is going to me, not FoH.

>For your consideration, I would like to present my interpretation of perhaps the most prevalent "chilled dish" in classic American Cuisine.

>Behold my irregular yet elite slice of wood-fired pepperoni pizza. Homemade dough, chilled overnight, then topped with only the most premium Newman's Own Fra Diavolo, Boar's Head Mozzarella, some kind of turkey pepperoni, and parmesean crumbly. Fired in a ~800 wood burning pizza oven, this is perfect pizza was then chilled in the back of my fridge for 3 days before being consumed early Friday morning as I was on my way to work.

>I'm planning to make pressed cod sushi with red and green perilla since perilla plants have taken over my back garden and this gives me an excuse to use them. What else can I use perilla leaves for besides Japanese food? It just grows wild here and in no short supply. It's drowned out my parsley and lovage.

Basically, any boiled, homemade dough would be fine by me. The csipetke that I mentioned earlier are very simple. You just pinch little pieces off of a ball of egg dough and drop them into boiling, salted water. Tarhonya are similar, but smaller.
There's also American dumplings like the ones for chicken and dumplings. Also klosse and knedliky from Austria and Czech Republic respectively. Doughboys from New Zealand. Etc etc etc.
Just thought it'd be a nice theme since literally everyone who has access to the internet has easy access to ingredients for making some sort of homemade noodle, pasta or dumpling and no one would be left out.

The challenge is about creating OC to the best of your ability within the time frame you have, interpreting the challenge goals as broadly as you want, and then having your efforts criticized to shit by non-participants.

In previous years we only had a week to throw something together, and the scores were cumulative, which meant that everyone was pressed to put out whatever they could each week if they wanted to stay in the competition. And yet, someone this new format has the lowest quality entries of any past challenge.

I figured that it wasn't in the spirit of the challenge in that it was all food that would have been better hot, but was eaten cold because of circumstances. I don't think there's anything wrong with preparing something at work if you cook for a living.
