Coq au Riesling is delicious, make a batch on the weekend and eat it all week. Salad is obvious, too, find some good lettuce like at a farmers market. Fucking delicious.

Yeah. Something i like is to saute a seasoned chicken leg and thigh in a steel pan with some olive oil, then add some chopped potatos and carrots. I add a pad of butter on the chicken and I put the whole thing in the oven under a lid, tinfoil works as well. While that's cooking i usually take the time to make some broccoi in a wok. Take out the chicken, check the internal temp, stir the potatos abd carrots, and put it back in the oven until the skin is crispy and a nice brown.
I usally use that time to prepare a drink and smoke some weed, since it's generally something I make on the weekends. Careful with the pan, my buddy burned the shit out of his hand because he wasn't careful enough taking it out of the oven.

You can chuck in chicken or whatever you want really. Salads are fun because they're completely versatile.
Get a rotisserie chicken and some mixed vegetables and make pot pie filling.
Serve with potatoes if you don't want to bother with the whole pie crust thing.

Grilled meats and fish are great in salads, as are beans, mushrooms, or nuts. Really hearty salad can be an entre meal by itself.

Are you trying to make like a big bowl of something?
I love a pasta salad, potato salad, egg salad, chicken salad kind of bowl, cold ready to go. You can go any theme on that stuff, from Greek to Israeli to Asian to southern.
I also make a jello mold/salad sometimes, and I don't even wait for soft set phase. Heat water in microwave, dump packet into pyrex dish, dissolve powder by stirring patiently. Add cold water from fridge. Dump in various minced fruits, chopped nuts, celery, etc. Can do anything from tomato aspic (lemon jello, v8), with cole slaw mix in it, to lime-apple, peach-peach, strawberry-banana. So refreshing in the morning, or at bedtime, and it'll kind of hold a fruit that was just about to go past ripeness, like those bananas and peaches in season.
I love to do a roast. For cheapness, throw those turkey breasts, hams, ribs, chuck steaks, into your freezer when the holiday sales put them on special. Thaw them out overnight in the fridge, or drop into a crock pot. Roasting a turkey breast sunday night gives you two days of delicious work lunches (curried turkey salad with apples and raisins is my favorite). Stab a rump roast and stuff with garlic in a few places, and roast in your leftover morning coffee. Enjoy roast beef dinner, sandwiches with horseradish, roast beef hash for breakfast, open faced w/ gravy on toast, etc.
Weekend is a good time to assemble a casserole like mac n cheese with ham, lasagna, enchiladas, and portion into the freezer. Egg casseroles are economical, baby quiches in your muffin tin, frittata, awesome for serving with salads, not just breakfast.
You're home to proof bread doughs for calzone, pizza, knots, rolls, doughnuts. Booking some dough for croissants, pastries, while you clean, pausing to fold that dough every 30 minutes. Think of your strudel!
