Potatoes, potatoes, and potatoes. They super cheap (about $4 for 10 pounds), can be cooked in a variety of ways, they're healthy, and easy to cook. Buy a decent peeler and you're set.

all of these are dead simple to season and cook. serve with a side of rice or potatoes (both also easy to cook) and salad or steamed veggies to make it a complete meal. when you get better/more adventurous, you can try fancier seasonings or more complex variants.
