I love my gas grill for its ease of use but I want to build a cheap lump charcoal grill for searing sous vide meats any ideas? Preferably compact and good for that.

I love to make a smokebox in my gas grill. I just make a tray of aluminum foil, stab it, cover with foil, stab that. Put in some wood chips. Throw it on the grate in my gas grill, and in like 15 minutes, you have crazy smoke, and eventually charcoal in there that still smokes. What more could you want? Don't reinvent the wheel, if you're into DIY. You can just buy a roll of heavy duty foil and get your paper aiplane folding skills brushed off.
