This is probably a dumb question, but why don't the peaches I buy taste like the peaches in birthday fruit cake?
In birthday fruit cakes, they're always so sweet and juicy and are my favorite part, but when I buy them fresh they have a bitter/sour and hard feel to them.
They're tinned

buy canned peaches instead
Just because you bought them fresh doesn't mean they are ripe yet, guy. Peaches shouldn't be hard, they should be firm, but with a slight give when lightly squeezed. When you smell the stem end it should smell strongly of peach.
Under-ripe peaches will be hard and not smell very strongly yet. Overripe will be soft and feel like it will bruise easily and start to smell a little off. If you buy underripe just leave them on the counter for a few days and they will ripen. Putting them in a paper bag will speed it a bit.

Or use the tinned ones

you're right, that is a dumb question

I'm assuming the ones on the birthday cake were canned in a syrup. Thus making them very sweet and juicy.

Because fruit cake is unholy shit? "Why does fruit cake exist," is a better question.

Lightly dust your fruit in sugar to make it 'bleed' water.
