I ate half this cheddar a few days ago and left it wrapped in a paper towel as a temporary measure. I forgot about it in the fridge and now it's all dry and cracked on the outside.
Do you guys think it's safe to eat? Probably going to eat it regardless, but I'd like your input.
it's safe but it will best be used in something than eaten straight up

when this has happened to me, either I throw it in something like soup or spaghetti sauce to melt, or else I cut off the outside hard part and then the inside is just normal cheese

Texture is a bit like plastic on the outside, until I chew for a bit.
I can honestly say the flavor has gotten a bit better from a few days ago.

Cheese sometimes tastes better when it gets fresh air circulating around it, so that's not surprising. Bloomy cheeses especially can start to smell/taste too much like ammonia if they're kept airtight. But like the other Anon said I'd use it in a sauce or something if that texture is unpleasant.
