i have a santoku knife the has them and a regular chef knife that doesn't and i haven't noticed a difference while using both

I'm content with my wusthof chef's knife.

Because I have a blacksmith/knife maker friend who gives me free knives. Latest is a 10" chef knife made from elmax steel, it's a beast.

They create small gaps between the food and the blade which can prevent the food from sticking via capillary action. That works really well on some foods, and it doesn't work at all on others.
