You could make mashed potatoes fine in the microwave. Really anything you boil will work. Can't think of a way to make rice or pasta good though with just a microwave and no premade sauces.

You could most like do a carbonara with the residual heat of the pancetta and oil.
Pasta with cauliflower. I usually fry up some bread crumbs in oil with garlic and chilli, but I guess I could infuse the garlic and chilli in the oil instead.
