The sign of a good restaurant to me is in it's salad if offered. Dairy/Meat are EZ-Modo to serviceable flavor. Cooked veggies/carbs are intermediate level, and raw veggies are hard because absolute freshness is key as well as balancing natural flavor components. A salad must have quality ingredients prepped with both time and care. A good DIY, but not excessive, dressing is also important. You can't really hide any shortcoming of a salad if you are lacking in these areas. That's a pretty good deal for the whole meal though.
