I'm taking a 3-4 day cross country trip tomorrow. I have a cooler for drinks. Truck stops have microwaves that I could use to heat up some meals. What food should I bring? I want to be pretty healthy. I don't want to spend money on fast food, but if there is a relatively healthy fast food option that is also really cheap, then I am willing to consider that too. Thanks!

3-4 days of eating unhealthy isn't going to kill you. It's part of being on the road. Unless you're a pro in a rig, just don't worry about it and eat like shit. The pros have plug in in the truck for electric grills and shit, so they aren't eating like shit 24/7, but you'll b fine for half a week.

I don't know about you, but eating fast food/truck stop food would kill me (mentally and spiritually). I found a good deal on summer sausage. I'm thinking some cheese will keep well.

I had some chickpeas with veggie chorizo onions and mushrooms that I put in a low carb tortilla and ate for a couple of days on a road trip. They were good cold but heated would be good too.
My suggestion is wraps if you want something handheld, and low carb wraps don't get as soggy as regular tortillas.
Also, if you are going to be in farm country you can get really cheap and delicious food at a produce stand/farmer's market. I guess buy some fruit.
You could bake some potatoes. You can eat beef jerky. You can eat nuts and seeds, trail mix, sandwiches, raw vegetables... You can eat anything fool. Bring a can of BEANS and a SPOON
