I made my first biscuits from scratch. Used 1/2 of Alton Brown's recipe, substituting bacon grease for shortening and milk/vinegar mix for buttermilk. Came out great.

I use his recipe for biscuits and I agree with you. They're the best I've found. Always a nice rise and fluffy. I do use buttermilk usually but I have used a lemon juice/milk mixture that works fine too. I only make them about once a month because I always have to make sausage gravy with them, lol.

I don't know what you're talking about.
All of his recipes are pretty average in cost and length. It's just his lengthy explanations of the science behind what he's cooking that seems to draw them out.

You can substitute buttermilk with sour cream or greek yogurt with excellent results.
Each will give baked goods a fluffiness you don't get from just milk.
