I'm making ice cream and I would like some advice. Is a ratio of 5:7:8, where 5 is citrus juice, 7 is sugar and 8 is coconut milk, good, or is it too sour? Should It be something more like 3:7:8?
In short, what is the best ratio for fruit base:sugar:dairy/coconut for ice cream?

I'd do 3:7:7 unless the coconut milk is bitter. Always taste your ingredients and adjust accordingly, but most off the shelf coconut stuff is already sweetened.

I know that alcohol inhibits gluten formation in batter, which is why one uses it there, but why here?
