Does salad oil enhance the absorption of nutrients or is it only for flavor?
I like my salad raw but I wonder if there's a disadvantage to it.
There is one widely publicized study that says oil is oh so necessary in a salad because otherwise you won't absorb carotenes and lycopene. That study was funded by the oil industry.
Other, more detailed higher quality studies have found that you need about 2-3 grams of fat in a meal to absorb all the fat soluble vitamins from raw vegetables. So just a couple almonds will do the jobs.
In addition, you can absorb adequate vitamin A to reverse vitamin A deficiency on a diet that is 10% calories from fat.

Oil is unhealthy and completely empty calories, while also being the most calorically dense food on the planet, providing virtually no satiation for the calories.

The fat in a single walnut is enough to maximize absorption of fat soluble nutrients. Don't waste your caloric budget on flavorless oil. Make a rich dressing with something like tahini or peanut butter.
