I've got a mate who's a butcher and tells me his trade put him off eating most sausages. Meat scraps and cereal and fat. Ask him which ones he'd choose?

Best I've ever had were given to me by a friend, they were homemade from duck and venison, sounds like a strange kind of combo but hey it was duck shooting season and he had the back of his truck full of them and a couple of deer. Were amazing.

Watched a video where a guy made some using abalone and pork, looked good too and I thought it was really interesting to use seafood in a sausage. They have a kind of mild mushroom type of flavour so I think it would work well.
